Chunky Monkey Banana Bread

When my bananas went mushy, I wanted to do something other than the banana bread or banana chip muffins that I usually make. If you saw my Butterbeer Birthday Cake post, then you probably know that I recently learned how to make salted caramel sauce, and since then, I’ve been putting it on E V E R Y T H I N G, including this bread. For good measure, I also threw in some chopped walnuts.

I have this habit of buying bananas. I don’t know why… I don’t really eat bananas. I use them in smoothies… but I don’t eat them.

Inevitably, my bananas get brown and mushy, and I have no choice but to bake with them.

This time when my bananas went mushy, I wanted to do something other than the banana bread or banana chip muffins that I usually make. So what better way to spice up my banana chip muffins than adding salted caramel… and walnuts.

I call it Chunky Monkey Banana Bread, but really, it’s pretty healthy… right? Walnuts and bananas and dark chocolate are all fairly healthy… I think. Don’t quote me on that, but I’m definitely eating this stuff for breakfast.

A couple tips for you on this one:

  • Make sure you use ripe bananas! And mash them up really well. Go crazy. Go ape! (See what I did there?)
  • Mix the sugars in really well before blending in the flour and other dry ingredients.
  • Don’t over mix! If you over mix the flour and other dry ingredients, your bread could turn out very dense and dry. And you don’t want it to get dry. Just look at how gooey and delicious this looks inside!
